Chocolate and Blackberry Fudge Cake
I feel like I’m on a constant mission to perfect the ultimate, fudgiest chocolate cake - and I don’t mind how many chocolate recipes I have to test and taste before I get there (I’m dedicated like that).
Whilst I’m sure I’ll continue to experiment with different flavours and recipes; I know that this one will become a firm favourite and 'go-to' chocolate cake for many years to come.
You’ll notice that the batter for the cake mix is pretty runny - and that’s ok! The vegetable oil (instead of butter) helps to keep the cake light, and the espresso really brings out the cocoa flavour - adding that bitter richness that makes this fudge cake so indulgent.
On top; the chocolate fudge buttercream involves minimal effort for a delicious result - it’s very smooth and rich. The giant blackberries finish off this fudgy, indulgent cake perfectly - with the coulis adding a fresh kick, making it oh so easy to eat in big slices.
