Classic Lemon Drizzle Loaf
As far as traditional bakes go; lemon drizzle cake is one of my all time favourites.
As much as I enjoy experimenting with different flavours, sometimes simple is just best - and everyone needs a tried and tested, go-to recipe for classics like this.
I’m a sucker for a citrus cake, but it’s the drizzle that really gets me. There’s something really satisfying about pouring a sugary syrup over a fresh-from-the-oven cake, knowing its going to be perfectly moist when it’s finally cool.
This recipe calls for olive oil instead of butter, making it even lighter. That, paired with the aforementioned lemon syrup poured over the warm loaf, makes it fresh and moreish.
It’s the ideal Sunday morning bake, ready to be scoffed in the afternoon with a big cup of tea and, if you happen have any left (why?) it’ll keep perfectly for a cakey pick-me-up during the week too.
