Chocolate and Tahini Cookies
Mediterranean-inspired cooking seems to have dominated the food world, particularly over the past twelve months - and its popularity doesn’t seem to be waning.
It really isn’t difficult to see why. There are so many fresh, delicious ingredients to choose from - with plenty of health benefits too. Today, I’m talking about Tahini (or sesame seed paste). It’s such a great ingredient and it works so well with sweet or savoury dishes - I often use it when making salad dressing.
While I can’t vouch for the health benefits of these chewy chocolate cookies (other than happiness?), they are most definitely tasty, and worth a try!
Tahini works really well as a peanut butter replacement - so I knew these cookies were set to be a winner from the outset. They're great on their own - but you can take them to the next level by trying out the tahini buttercream and making them into cookie sandwiches (because yes, I’m obsessed).
The added sprinkle of sesame seeds give them an extra bit of crunch too - perfectly topped off with a drizzle of chocolate for good measure.
