Speckled Egg Cupcakes
Last week, I heard a guy in the supermarket say “Nah mate, Easter’s all about the chocolate”.
Now, I’m by no means an expert on Christianity, but I’m pretty sure that’s not what Easter is all about. As a worshipper of chocolate though, I’m not complaining.
This year, I ate my first bag of mini eggs on New Year’s Day!
The smell of Quality Street over-indulgence was still in the air and I was tucking into those mini speckled morsels like Easter wasn’t a whole three months away.
They’re by far my favourite seasonal sweet treat though and it was my love for mini eggs that inspired the creation these cupcakes last year - I couldn’t let another Easter go by without sharing them.
Although there are few processes involved in the making of these cupcakes, they are so much fun to make a totally worthwhile.
I’ve been working on this chocolate sponge recipe for a while and I love it - really rich but so light at the same time and the light as air Italian Meringue tops them off so perfectly. Don’t even get me started on those mini nests!
