Peanut Butter and ‘Jelly’ Sandwiches
I don’t think there’s any danger of me ever being too ‘grown up’ for Peanut Butter & Jelly - there is something which always brings me back to this classic flavour combination.
This recipe started with the soft cake-y cookies, and what better to compliment peanut butter flavoured cookies than more peanut butter - in the form of a smooth peanut-butter-Italian-meringue-buttercream filling.
Of course, 'PB' isn't quite the same without the 'J'; so these are finished off with a dollop (and a drizzle) of raspberry jam (although strawberry, or even blueberry jam works great too!).
Perfect served with a cup of tea, or a tall glass of milk. Enjoy!
