Matcha and White Chocolate Swiss Roll
I officially fell in love with Matcha whilst on holiday in Vancouver two years ago. We found the most amazing Japanese café, where I had my first Matcha Latte. We loved it so much; we found an excuse to visit every day until we had to (reluctantly) go home.
They served Japanese sweets and really delicious rice bowls on beautiful plates and the Matcha Lattes were so big, they were practically served in soup bowls. I can’t wait to go back and visit it again.
I came back from our holiday vowing to bake with Matcha powder and somehow, it’s taken me two years. My love still remains though.
The idea for this Swiss Roll has been brewing for some time now (albeit not two years, but still). I love the combination of white chocolate and Matcha - the sweetness of the chocolate compliments the unique flavour of the green tea powder so perfectly - it’s a match(a) made in heaven (sorry-not-sorry).
Back to Swiss Rolls; the trick is to roll the sponge up while it’s still really warm, to prevent any crack-age. That way, it won’t be so tricky to roll when you add the white chocolate filling.
I should know; I made this five times in one weekend - oops!
