Lemon, Poppy Seed and Passion Fruit Cake
Lemon and poppy seed has always been one of my favourite combinations - it’s so simple and yet so delicious. This recipe also calls for the introduction of passion fruit; which adds an exotic twist to a teatime classic.
My favourite thing about this cake is the silky Italian meringue buttercream; with a burst of passion fruit - I could happily eat it all straight from the bowl (and almost did)!
Italian meringue requires a bit more effort but it's totally worth it in the end. The process involves a little bit of multi-tasking but leaves you with a smoother finish. I highly recommend using a sugar thermometer but if you don't have one, I have included some helpful tips in the recipe steps below.
