Oat and Maple Cookie Sandwiches

I recently returned home from a late summer holiday and, in my absence, it felt as though the weather in the UK had turned from summer to autumn in the short space of a week.

As sad as it is to say goodbye to summer, I do have a bit of a soft spot for autumn - it’s a great excuse to go out a buy a whole wardrobe of chunky knitwear and, of course, sprinkle cinnamon on everything!

If you’ve already taken a peek at some my other posts, then you might have guessed that I’m a huge fan of the cookie-wich. It might just be that I’m greedy, but I love the idea of two chewy cookies sandwiching a soft buttercream or even ice cream. 

Packed full of oats, brown sugar, cinnamon and maple syrup - to me, this recipe is the epitome of autumn. A word of warning though, they’re definitely more hamburger-sized than sandwich-sized; which is ideal if, like me, you’re currently working on your winter coat! 

What you need (makes 8 sandwiches or 16 cookies):

For the cookies:
160g unsalted butter
80g light brown sugar
130g caster sugar
2 medium eggs
160g plain flour
1tsp bicarbonate of soda
1tsp cinnamon
250g oats
150g raisins

For the buttercream:
100g unsalted buttercream
1tbsp maple syrup
500g icing sugar
2tsp cinnamon

What you need to do:

For the cookies:

1. Preheat you oven to 180°c and line two trays with baking paper
2. Place the butter and both sugars in a bowl and mix until fluffy then slowly add the eggs and mix until combined
3. In a separate bowl, mix the dry ingredients together then using a wooden spoon, combine with the rest of the ingredients and stir through the raisins
4. Spoon the dough into balls of around 60g each and place them on your trays, flattening slightly
5. Bake for 12 minutes, the remove from the oven to cool

For the buttercream:

1. While the cookies are baking, place the butter into a bowl and mix for around 5 minutes, until soft and fluffy
2. Add the maple syrup then slowly add the icing sugar, one spoonful at a time
3. Sprinkle the cinnamon into the buttercream and continue to mix until you have a soft but firm buttercream
4. To assemble, pipe or spoon around a tablespoon of buttercream into the centre of half your cookies, then sandwich together with the other half
5. Eat and enjoy!
