Sticky Toffee Bundt Cake
Well, January is almost over so I guess a Happy New Year post is out of the question!
By now, much like the early January gym routine, Christmas is but a distant memory and the post festive-feasting diets have gone out the window (where they belong). In fact, if you’re anything like me, the need for comfort is stronger than ever.
It’s been a somewhat manic start to year, hence the belated new year post - and it’s left me feeling, well, pretty uninspired in the baking department - bakers block, anyone?
I’ve taken the opportunity to spend any spare time under the duvet watch Netflix - it’s safe to say, I’m not winning at Winter.
In the name of ‘treat yo’ self’ I took my sorry self to Lakeland - in search of inspiration and treated myself to a big Bundt tin - something I’ve been longing after for a while now.
I got home and immediately had to bake something with it (see, it worked!). I decided to make this utterly delicious sticky toffee cake, full of warmth and comfort.
For this recipe, I soaked chopped dates in a rich porter - which really enhanced the sticky syrup. If you don’t fancy this, then you can substitute this for tea.
The best part about this recipe is that it’s very indulgent without ever feeling too heavy or rich - the perfect balance.
