Spiced Toffee Apple Cupcakes
Nothing says autumn quite like toffee apples, right? I was obsessed with them growing up and can still remember that sweet crunch of the toffee coating, as my teeth made their way through to the juicy apple underneath - pure joy!
These cupcakes are the perfect bake to celebrate as we slip back into our knitwear and, let’s face it; happily back into our cosy comfort zones.
I don’t bake with apples half as much as I should. I’m not a fan of overly tart cooking apples, and I’m always worried I’ll end up with a mushy mess if I bake with any of the apples I actually enjoy munching on - how wrong was I?
I was out on my weekly food shop last Sunday and bought some red, shiny gala apples with the best intentions of eating lots of fruit and veg in the week. By the time Thursday rolled round, my lovely apples were still sat in the fruit bowl and I finally accepted that they were never going to get eaten unless I baked up something delicious (story of my life).
The great thing about baking with these apples is that they still retain the right amount of bite, and sweetness; without having to add too much sugar to them. Though gala was my preference for this recipe, you can of course opt for something a little less sweet if you’d prefer - a classic granny smith would be perfect!
The spiced cream cheese buttercream tops these cupcakes off nicely - the mascarpone is light and leaves you with a perfectly whipped buttercream ideal for piping those swirls.
Don’t be shy with that final drizzle of toffee sauce either...
