Pistachio, Olive Oil and Cardamom Cake
Some of my favourite local coffee places are The Grocer shops in Amersham Old Town; which I've been going to for a few years. They serve great coffee and, more importantly, delicious food. I recently tried their Pistachio and Olive Oil cake and got a little bit obsessed. I kept finding myself craving it so, so I decided to make a version for myself.
It’s really bloomin’ lovely!
This is by far my favourite cake on here to date. It’s very indulgent but not too heavy - it also keeps well and won’t dry out (with a little bit of extra help from a drizzle of honey on top).
Although I’ve used flour in this recipe, you can easily substitute for polenta if you’re looking for a gluten free bake (obviously you would also need to substitute the baking powder for a GF alternative too).
