Speedy Seedy Granola Bars
This is the kind of bake that’s ideal for a lazy Sunday afternoon. These Granola Bars are really quick to make and will easily see you you through a week of snacking (you’ll thank yourself when it gets to elevenses).
What I like most about this recipe; is that you can mix up the flavours with any dried fruits, nuts or seeds that you have available. You can also switch honey for golden syrup or maple syrup - I actually used orange blossom honey for this batch, which added a citrus twist. In times of need, dark chocolate chips are another possible addition.
Having said that, I really recommend trying out this combination. The apricots are soft and sweet, and work well alongside the crunchy, seedy bites; with the honey holding it all together perfectly.
Life hack: crumble these on top of Greek yogurt with an extra drizzle of honey for the breakfast of champions!
